Blueberries are one of my favorite fruits. The color that comes out of them when you cook them down is incredible. They are rich in bioflavonoids and are wonderful at satisfying your sweet tooth but helping to balance your blood sugar at the same time.

Serves: 8 squares

Ingredients

  • Crumble:
  • 2 cups walnuts
  • 6 dates
  • ¼ tsp salt
  • 1 tbsp cinnamon
  • ⅓ cup almond flour
  • 2 tbsp ghee or coconut oil
  • 1 tsp baking soda

  • Filling:
  • ½ cup raisins
  • 1 cup coconut flakes
  • 2 containers blueberries
  • 1 container coconut milk (about 1 cup)
  • ⅛ cup honey (I also made it without honey and it was really yummy as well)

Instructions

  1. Preheat oven to 350 degrees
  2. Put all filling ingredients (except for honey) into a pot and heat on medium heat stirring occasionally for about 20min
  3. Put all crumble ingredients into a Cuisinart and blend until walnuts are crumbled but not to much that they become a paste
  4. Put half of crumble ingredients into the bottom of a 8x8 pyrex cooking dish
  5. When filling ingredients are nice and thickened turn off heat and stir in honey
  6. Pour filling on top of walnut crumble and then add the rest of the crumble on top of filling
  7. Bake in oven for 35-40 min

    Love your recipes. Question, though, what size “container” do you mean when you say 2 containers. I often use frozen berries leftover from summer picking. Cup measurement would be helpful. Thanks!

      Good question! The small the containers you get from the grocery store are 4.4oz which is just over 1 cup of blueberries each so approximately 2.25 cups total for the recipe but you can’t really screw it up by adding too many blueberries. Enjoy!

    Can I substitute raw almonds, macadamia or brazil nuts for the walnuts? Those are the only three that are on my safe list right now. Also, are all the recipes on yoyr site safe to use at the beginning of SIBO treatment? I just found out and will start treatment plus new diet this week. So looking to organize my menu a week in advance so not so overwhelmed.

      Sure absolutely! I would lean more toward almonds personally.
      Many but not all my recipes use only foods listed in the green category of the SIBO Specific Food Guide. You will have to reference your SIBO Specific Food Guide to see which will work for you in the begging stages of your diet.

    I just found “clean” coconut milk at Natural Grocers too. It contains coconut and milk, no guar gum. The brand is called “Natural Value” Organic Coconut Milk. It’s horrendously expensive at $3.19 a can but at least you can buy it locally. Are there any other places in town that sell this?

    Hi Samantha, I am a huge fan of your recipes since my husband ended up with sibo. His sibo is under control yet we still use the recipes often as they have become favorites

    I think there may be an incompatibility with my tablet , because sometimes the number for the cup measurement is blank. I usually guess but this time thought I would ask because its the flour. How many cups of almond flour do you use in this recipe?
